The objectives of this paper were to: 1. Conduct a literature review covering masticatory behaviour, sensory perception and sensory evaluation methodologies; 2. Formulate gelatin gels and match the physical properties used in previously published research; 3. Conduct a sensory evaluation using the Temporal Dominance of Sensation (TDA) techniques using gels with a constant flavour level but varying hardness; 4. Carry out another sensory evaluation using the TDS technique using gels with a constant hardness level but varying in the concentration of flavour
