Summary
Tubular Heat Exchangers (THE) are widely used for heat transfer in the processing of food and biological materials. Heating and cooling are major operations in food processing. Food is complex and has physical properties that may be altered during processing of food. Therefore it is important to study thermal behavior of food during heat processing. The aim of this project is to provide quality data to generate a master curve on the heat transfer of non-Newtonian fluid in laminar, transition and turbulent flow regime in a THE as test fluids. Different foods have different thermal properties, so in order to obtain accurate and reliable results, two major thermal properties: heat capacity and heat conductivity of the samples will be measured
