Summary
There is a common problem in the spray drying industry: when sugar-rich products are spray dried, a glassy layer is formed inside the spray dryer and no free-flowing powder is produced. This is due to the low glass transition temperature of the apple juice powder, hence maltodextrin can be added to increase the glass transition temperature of the powder. However, a significant amount of maltodextrin is required to dilute the fruit component of the fruit juice powder which is considered undesirable.
