Summary
The aim of this project was to develop a 100% blueberry beverage that has concentrated levels of antioxidants. The desired anthocyanin level for the beverage is 250mg/100ml. This level roughly equates to the same anthocyanin content received when consuming 200g of fresh berries. Since the majority of antioxidant ability in blueberries is due to the anthocyanin content we focused on concentrating this factor within blueberry juice
