Summary
This project involved developing two protein-dense products which were a meat analogue and extended meat product nutritionally and physically suitable for infants aged six months onwards which resemble the texture and appearance of chicken breast meat. The extended meat product consisted of mechanically separated lamb, a low grade meat product which was turned into a higher value product in terms of nutrition and texture. Both products were produced using a co-rotating twin-screw extruder fitted with a 450 x 30 x 5 mm (length by width by height) slit die. The temperature in the barrel reached up to 160°C with each of the seven sections in the barrel having a pre-set temperature--Abstract
