Summary
The proposed beverage is the formulation of a 4% (ABV) alcoholic ginger beer with a flavour profile similar to Bundaberg non-alcoholic ginger beer. The target market for the beverage is aimed at consumers over the legal drinking age of 18. It is a genuine brewed ginger beer, using cane (sucrose) sugar as the fermentable sugar source and local ginger to provide the base flavour. A ginger extract solution provided by the sponsor for this project was also used to enhance the ginger flavour and pungency of the ginger beer. After some initial trials a factorial experimental design was conducted where ten batches of ginger beer were produced with systematic variation in the level of ginger and sweetness.
