Summary
This study was conducted at a Christchuch plant and aimed to set a benchmark for Campylobacter through the primary poultry processing section of the plant. The levels of Campylobacter at this plant were investigated and subsequently compared to revious similar studies at the other tqo processing sites. This study sampled five birds at eight processing points over eleven different flocks. The birds were rinsed using the National Microbiological Database (NMD) procedure and analysed onsite in the microbiology laboratory. The results from the Christchurch plant were similar to those reported at other plants. The scalding and immersion chilling both significantly decreased the levels of Campylobacter
